The data protection trustee service is, like the misuse protection, part of Domain Shield and cannot be ordered separately. You find instructions on how to activate Domain Shield here.
As soon as the Domain Shield is activated, you can click on "Domain Shield" in the Control Panel under "Domains" for the corresponding domain and activate/deactivate the "Domain Shield - Data Protection" there (activated by default).
